Who doesn’t love a good waffle!? Especially when they are figure friendly and will actually help you to continue reaching your goals and not set you back!
Okay, here is how it goes!
1/3 cup egg whites
2 TBS coconut flour (could experiment with regular flours if desired)
2 TBS unsweetened vanilla almond milk
1 scoop vanilla protein powder (can play around with flavors) – I used a scoop of my vanilla Isapro
1 packet stevia
1 tsp baking soda
1 1/2 tsp unsweetened applesauce
1 tsp cinnamon
Pour 1/3 cup egg whites into mixing bowl. Wisk eggs until whipped (this is key for fluffy goodness!)
Next, add remaining ingredients and mix until there are no clumps.
Pour batter onto a medium preheated waffle iron and cook until golden brown!
I topped mine with 1 tsp peanut butter and 1/2 cup berry puree!
Could also use sugar free syrup!
