As promised, I am sharing with you my amazingly delicious, melt in your mouth, coconut, chocolate, peanut butter no-bake cookies! I adapted this recipe from a few other sources to make my own and it turned out like perfection on the first try!
Now, to be honest, I did not write down the measurements as I went along (fail), so I am giving you “guestimation” measurements!
1/2 cup agave nectar (could try with honey as well!)
1/2 cup unsweetened cocoa powder
1/4 cup unsweetened almond milk (could substitute for milk of choice)
1.5-2 cups oats (I used old fashioned)
1/4 cup coconut oil ( did not melt before hand because it will melt on its own when mixing it with rest of ingredients!)
1/4 cup natural peanut butter (could substitute for any nut butter)
2 tsp vanilla extract
As much shredded coconut as you want!
1/4 cup cocoa nibs
In a medium sauce pan over medium heat, mix together the agave (or honey) and cocoa powder. Keep stirring until well combined.
Then, stir in almond milk and coconut oil and bring to a boil. Once it has hit a boil, keep stirring and let boil for one more minute!
Next, remove from heat at stir in rest of ingredients. Then place scoops of goodness onto wax paper. Place in fridge until desired firmness.
Take out and devour! Literally…. I did = )
